Hello, doston! Aaj hum banayenge ek zabardast dish from South India – Chettinad Chicken! Yeh dish apne bold spices aur amazing aroma ke liye jaana jaata hai. Toh chalo, shuru karte hain!
- Ingredients:
- Marination ke liye:
- 500 grams chicken (pieces mein kata hua)
- 1/2 cup dahi
- 1 tablespoon ginger-garlic paste
- 1 teaspoon haldi powder
- 1 teaspoon red chili powder
- Salt to taste
- Chettinad Masala ke liye:

- 2 tablespoons tel
- 1 bada pyaz (finely chopped)
- 2 tamatar (chopped)
- 1 tablespoon ginger-garlic paste
- 2 hari mirch (slit)
- 1 tablespoon dhaniya powder
- 1 teaspoon jeera powder
- 1/2 teaspoon kali mirch powder
- 1/2 teaspoon saunf
- 1/2 teaspoon rai (mustard seeds)
- 1 sprig curry leaves
- 1/2 cup grated nariyal (coconut)
- 1 tablespoon khuskhus (poppy seeds)
- 2-3 sukhi lal mirch (garam paani mein bhigo hui)
- 1/4 cup fresh dhaniya (chopped)
- 1 tablespoon lemon juice
- Salt to taste
Instructions:
- Chicken Ko Marinate Karein:
- Ek bowl mein dahi, ginger-garlic paste, haldi powder, red chili powder, aur salt mix karein.
- Chicken pieces ko is mixture mein achhe se coat karein.
- Cover karke refrigerator mein kam se kam 1 ghanta marinate hone ke liye chhod dein. Better results ke liye, raat bhar marinate karein.
- Chettinad Masala Tayaar Karein:
- Ek pan mein tel garam karein. Usmein saunf aur rai daalein. Jab splutter karne lage, tab…
- Finely chopped pyaz daal kar golden brown hone tak bhunein.
- Ginger-garlic paste aur hari mirch daal kar 1 minute tak bhunein, jab tak raw smell chali na jaye.
- Chopped tamatar daal kar cook karein, jab tak tamatar soft aur oil separate na ho jaye.
- Ab dhaniya powder, jeera powder, kali mirch powder, aur salt daal kar mix karein.
- Masala Grind Karein:
- Ek blender mein grated coconut, khuskhus, bhigo hui lal mirch aur thoda paani daal kar smooth paste bana lein.
- Chicken Ko Cook Karein:
- Marinated chicken ko pan mein daal kar onion-tomato base ke saath mix karein.
- Medium heat par cook karein jab tak chicken brown hona shuru na ho jaye.
- Ground masala paste daal kar achhe se mix karein.
- Cover karke low heat par 15-20 minutes ke liye cook karein, ya jab tak chicken cook na ho jaye aur flavors achhe se blend ho jayein.
- Kabhi-kabhi stir karte rahin aur zarurat ho toh thoda paani daal sakte hain.
- Finish Up:
- Jab chicken cook ho jaye aur masala thick ho jaye, tab fresh dhaniya aur lemon juice daal kar mix karein.
- 2 minutes ke liye aur cook karein.
- Serve Karein:
- Garam-garam Chettinad Chicken ko extra dhaniya se garnish karein aur steamed rice, roti, ya paratha ke saath serve karein.
